Cheerio!

This morning I was feeling a wee bit peckish, and decided to have a British tea style brunch. Generally, when we think about tea sandwiches, we think of the tiny triangles adorned with cucumbers and cream cheese. Well, those are good too, but I took a little inspiration from my favorite tea house in Seattle, and created a watercress radish sandwich.



To make them, I used an herb butter that I made myself. Any herbs will be fine, and you can use cream cheese if you prefer, I just didn't have any on hand. I then added thinly sliced organic red onion and radishes to a bed of watercress and herb butter spread on to my whole grain toast.

These little darlings will set you back about 30 carbs. And if you keep it open faced, and trim off the crusts, only 15! So Erin, you CAN try this at home.I know you're asking, "where is the protein?" Traditionally, there is no meat in tea sandwiches, however, you can add a slice of turkey or provolone and it would protein rich and tasty. Also, as a side note, I thought they would be even better with a thin slice of tomato, and maybe even cucumber. Next time!

I served my sandwich with a splash of Earl Grey tea, and thoroughly  enjoyed them for a perfect Saturday morning brunch. Simple, good, English. What's not to love??
